Cooking with Leftovers - 151 BBQ Brisket Pizza

So you go out to eat and you got leftovers. Well, who wants to just reheat it and eat it? No one.. thats boring and lame, & never tastes as good. Can't let it go to waste either, so we have always loved leftovers. We will even order a little more when we go out sometimes so we can make another meal with the leftovers. Usually we use leftovers in breakfast omelets or sandwiches, but this time we went for leftover pizza.

This was  the second time we tried making pizza, but the first time with leftovers and BBQ.  We had leftover brisket, so I looked up a few recipes and like always I take my favorite parts and make my own recipes... So here we go:

Red onions diced

Freshly shredded Gouda and Provolone cheese

BBQ sauce.. any kind, but wish we had some from 151's but this will make due

Now lets build a pizza:  You can use any kind of pizza dough, but we had Herb & Garlic on hand (added some good flavor).   Next, the sauce (water it down a bit or add beef or chicken broth to the BBQ sauce a bit so it spreads easier, it also tones down the taste. This way it's just a touch of added flavor when it mixes with the onions and melted cheese)

and finally the cheese, mmmmmmm love cheese!!

Bake the pizza at 425 degrees for about 6-8 minutes or until crust/cheese is to your liking.

Round one individual pizzas, one a little more well done then the other both so yummy

Last but not least and the best pizza of the night... the big guy! The crust was so thin,  packed with meat and cheese, the perfect amount of onions & a glaze of sweetness with the sauce... it was the best leftover meal we ever made. This time we also waited to add the cheese until halfway through.  The result: crispier crust, a lighter color & overall good ooze on the cheese....AMAZING
